    A global convergence toward Western-style diets that are high in calories, protein, and animal-based foods poses challenges for food security and sustainability. To quantify the benefits of shifting these consumers to more sustainable diets, several possible diet shifts are modeled. A framework is proposed to tackle the crucial question of how to shift people’s diets through the retail and food services sector.

  • Fostering rural women’s entrepreneurship with solar energy solutions

    Description of the project: India produces large quantities of fruits and vegetables, but more than 50% of this is wasted. The project aims to: 1) demonstrate the commercial viability of solar drying of fruits, vegetables and condiments, and convert them into profitable products on a micro enterprise scale; 2) equip rural poor women with solar dryers and train them on proper use. Sthree Sakthi Mahila Samajam installed solar powered air dryers in 2017 under the Socio-Economic Program of AIWC.

  • Compost and Biogas from Organic Waste Materials

    A researcher at the University of California Davis working in cooperation with an outside collaborator have developed a multi-stage process and system for treating organic waste materials. This process produces a high-quality compost derived from food waste and other organic materials while avoiding the environmental problems of traditional composting methods such as emissions of odors volatile organic compounds and other noxious gases.

    Background: Zinc and copper ions both play an important role in biological systems and in means of everyday life. The zinc ion is the second most abundant heavy metal ion and plays an important role on the cellular level. But zinc is also a well-known metal pollutant of the environment and it is a common contaminant in agriculture and food waste. Like zinc copper as also been identified as a significant environmental pollutant. Therefore the ability to be able to detect zinc and copper ions is very important because of environment and biological analyses.
